Meatloaf from the Total Woman Cookbook

1 ½ pounds ground beef
½ cup cracker crumbs
1 beaten egg
1 tsp. dried thyme
1 10-ounce can onion soup, undiluted
¼ cup finely chopped onion
2 Tbs. chopped green pepper or shredded carrot
1 Tbs. steak sauce (A-1)
2 tsp. Worcestershire sauce
½ tsp. salt
¼ tsp. pepper

1. Preheat oven to 350 degrees. Combine all ingredients. Shape this mixture into mold approximately two inches deep. Instead of the typical pan, use an unusual mold, like a fish-shaped mold or ring mold.
2. Bake about 1 ¼ hours. Let meatloaf sit in pan for ten minutes before you unmold it. It will be firmer and easier to slice.

Variation: BBQ Meatloaf
½ cup tomato sauce
1/3 cup water
3 Tbs. brown sugar
3 Tbs. vinegar
Dash of Tabasco sauce
2 Tbs. prepared mustard
2 tsp. Worcestershire sauce

Combine all ingredients; pour over meat loaf. Bake at 350 degrees for 1 hour and 15 minutes basting occasionally with sauce.
